Fresh Summer Recipes

Summer is here, and that means it is time to turn up the flavor! At United Supermarkets we are all about making the most out of this season with fun and fresh recipes that bring a little bit of sunshine to your table. Whether it is a fun snack by the pool, grilling dinner for family and friends, or ending the fun summer day with a sweet treat. We have three recipes that will become some of your favorites this summer. Let’s dig in!

Peach Salsa

Ingredients:

  • 1 (8oz) container of Fresh Cut Pico De Gallo
  • 1 Medium Peach 
  • ¼ small bunch Cilantro 
  • Pinch of Salt 

Instructions:

  • Place pico de gallo in a medium bowl 
  • Pit and dice peaches and add to bowl.
  • Chop the cilantro and add to the bowl 
  • Add salt 
  • Use a spatula to fold the ingredients together

 

Grilled Jerk Shrimp and Pineapple Skewers

Ingredients: 

  • 4 C. Pineapple 
  • 1 lb. Shrimp, shelled and deveined 
  • 4 Tbsp. Jamaican Jerk seasoning 

Instructions: 

  • Preheat grill to medium high heat 
  • Soak skewers in water pan 
  • Cube pineapple in 1 inch squares 
  • Place the pineapple and shrimp alternating on the skewer with ½ inch left on both ends 
  • Sprinkle jerk seasoning evenly over all finished skewers 
  • Cook for 2 minutes on each side 
  • Let rest for 2 minutes and serve 

Chocolate Covered Cherries

Ingredients: 

  • 1 lb. fresh cherries 
  • ½ cup dark chocolate chips 
  • Fun toppings: Crushed pretzels, Chopped walnuts, Course sea salt, Unsweetened shredded coconut 

Instructions: 

  • Wash cherries and place on a cookie sheet lined with a clean towel. Dry thoroughly. This is very important. If the cherries are not completely dry, the chocolate will not stick. 
  • Line a large plate or cookie sheet with wax paper. 
  • In a microwave safe bowl, melt the chocolate chips. Start with 20 seconds on high; stir, continue for 10 seconds if needed. 
  • Dip cherries into chocolate, then in the other toppings if desired. Place dipped cherries on a wax paper lined plate. 
  • Let cherries sit for about 30 minutes to allow chocolate to set. Serve immediately.
